OUR STORY
Whiskey Thief bears its name from the traditional tool used by distillers to extract a small portion of the spirit out of an aged barrel for sampling. An authentic part of whiskey culture, the whiskey thief is a true classic — much like the tavern will be as the people of Evanston get to know the knowledgeable servers and veteran mixologists.
We believe in the perfect balance of class, elegance, convenience and comfort. And by design, Whiskey Thief is all that. From the cozy “library,” where you can sip small batch spirits, to the convenient bar setup, where you can grab a quick bite, to the quiet booths tucked inside large open barrels, where you can settle in for an elegant meal complete with upscale bar fare, all matters of style and accessibility were considered when conceptualizing this unique experience in the heart of Evanston.

Whiskey Culture
No one knows who first conceived the simple but ever wondrous idea of converting the humble barley grain into spirit, but all agree it has been a collective gift from our Celtic forefathers.
Whiskey should look, smell, sound and taste nice. It should be made with high-quality ingredients, chilled in proper glasses, have fresh garnishes and fresh ice.
One should drink it, and think, “Splendid!”

Have A Drink At The Bar
Whiskey Thief's expansive whiskey selection consists of more than 70 bottles, including bourbon, rye, Irish, American, Canadian, single malt and blended spirits.
If you fancy something frothy, you'll also find more than 20 beers on tap.
Wine aficionados can appreciate the option of choosing from 24 different wines by the bottle and glass, and patrons can't say enough about the craft cocktail list. “The mixologists take sipping cocktails to a new level, combining intriguing ingredients with familiar fruit flavors and even herbs,” said one guest.
